I'm new/Advice needed....

Hi-
I'm Jolie and new to the boards but have been a lurker for almost a year now. :)
I'm 5'7 120-125 lbs and do about 30-60 minutes of cardio a day or every other day and Pilates 3x a week. To be honest I don't really have a set diet nor specific times when I eat. I usually wake up around 9AM, eat an apple or a bunch of grapes around 11 or 12. I usually have four or five snacks/meals over the next few hours until 7 or 8PM. I try to space them out 2 hours each. Each snack/meal is just any one of the following: tunafish(1can), 1 baked tilapia fish, cheese(1 or 2 sticks), PB(a spoonful), grapefruit, romaine lettuce salad wih fat free, carb free calorie free dressing(Walden Farms- I live for this stuff), a ton of broccoli or a piece of chicken thrown on the foreman. But all in all, I'm pretty sure my calories dont add up to anywhere near as much as I should eat. I drink a TON of water and drink pretty much 2 or 3 nights a week(usually red wine). Anyway, my question is about the PB. I read on a few posts critiquing other diets saying that healthy fats is essential. It said that a diet that has almost absolutely no fat/fat free is not good. Could someone explain that to me. Another questions- I'm obviously not trying to bulk up like almost everyone else, but am trying to just maintain my weight, more importantly- body fat. Any advice or foods I could add or subtract from my diet to get down to the lowest body fat percentage? I was on a low carb/South Beach sort of diet but couldn't and just CAN'T give up the fruit. So now I've sort of resorted to a South Beach style of a diet with fruit early in the day and by itself. I don't eat any cereals, breads or anything like that. I'd like to but since South Beach just cant. I'd LOVE to add chocolate to my diet. LOL. But mainly, I'd just like advice on what I could add/subtract my diet. I'd like to somehow get back to a set diet. Thanks so much and any other advice/suggestions would be MUCH APPRECIATED!
Oh and thanks for the year+ of funny posts and TONS and TONS of advice. I like get in a zone on this board- its crazy.

#1 - weight training will NOT "bullk you up." That is a myth. There are many many health benefits to weight training. I'd add it to your regime if you're not already weight training. It will help you maintain a good bf% if nothing else.....

#2 - Schedule your meals about 3-4 hours apart & eat more protein. Try to keep the foods you eat "natural" ie unprocessed. You should be eating within 1 hour of waking & your 1st meal should include some protein, like eggs + oatmeal. Since you're not (I assume) planning on starting a competition diet/plan -- you can keep the fruit.

Basically, there are certain types of fats your body needs to work properly that it can't make/get on its own - thus you need to supply them. Obviously, certain fats are better than others.....

i want to throw my 2 cents in too
penut butter try and get all natural,

if possible and for good fat try some flax seed oil or milled flax seed, if you get any make sure its milled not whole it will just go thru your system and wont get any nutritonal value with whole flax seed ,also get a omega 6 type of supplemnt fish oil and a few others simular that you can try . also
saw in your diet chesse ,from what i have been told here is that its not a good thing ,but that i could be wrong on
