Hot dogs [meat based] are made from 'selected beef and pork trimmings'. In the past this meant that they could be made from heart tissue and other organs. Today they must be made from 'muscle tissue' ... although if I remember my biology classes [insert sarcasm] the heart is a muscle. Oh well.

Hamburgers: If you are making them from scratch, then you can control the nutritional values. Use extra lean meat to keep fat levels to a minimum. If you are buying them premade, then the juicier the burger, the higher the fat content. Any smoked meats will also have high nitrate values.
The bottomline is that if you can make them yourself [meaning the burgers, unless you have a hotdog maker in your kitchen] and know what you are getting then there should be no problem. Otherwise, regard them as a cheat meal.
** What are you having with them as part of your dinner? Please don't say french fries.
