Would you be able to get good gain eating just like this ? I was curious I know it would be good for the body but what do you guys think ?

Yes, you can gain size with plant based diet as well. Plant based diets are low in saturated fats which are known to raise LDL levels and high LDL are a risk of coronary heart disease.
So eating fruits and veggies is good for your body, period.

gaining muscle is 90% resistance and weight training

the myth out there is that vegetarians can't build muscle, the reality is most vegetarians aren't weight lifters. so you are comparing apples to oranges

a vegetarian who lifts weights and has good genetics will gain more muscle than a meat eater who doesn't lift weights and has poor genetics.

EXCELLENT point.

Fruit and vegetables contain very little protein. In order to meet your protein requirements you would need to consume other foods higher in protein (legumes, grains, seeds, animal products)
