I think your diet is probably in line. You might watch the amount of fat -- are you getting enough? In one of your salads you might add a tbsp of olive oil or flax oil. I might ask do you get tired or feel starved on this diet & w/ this training schedule plus your job? If not, you are probably doing well here.
How is your "muscle tone" on the rest of your body? I'm getting at are you "skinny fat" -- did your previous extreme dieting cause you to lose a lot of muscle and you like weighing less, but you may not have a lot of muscle mass at this point? (Though your diet & training still seem to be in line.) That little stomach fat, if that is how you are built, may be the last thing to go and you simply just have to either live w/ a certain amount of it or continue to tweak your diet and training, to get to a lower body fat. And obviously I'm talking about a bodyfat that is made up of good solid muscle and a reasonable amount of fat (i.e. don't worry so much about the fat as getting a good amount of muscle). And make sure you are still getting enough food to maintain your level of activity so you dont' burn your muscle as well and end up back at "skinny fat".
And finally if there is anything further your doctor or an endocrinologist can do to help you deal w/ the hormones, please do that as well.
