How do you choose a (good) cucumber ?

Not the english one but the short and thick one ?

cucumbers sure are yummy, especially when straight from the backyard garden! not sure why this is in the muscle food forum though. cucumbers are mostly water and offer little nutrition.

Potassium and fiber
 
Firm with no soft spots.....wash with soap & water to remove the wax before using....

I like them sliced thin & soaked in vinegar...

fiber, maybe...potassium i am not so sure about. will do some research on this anthrax. i love cucumbers and grown them every summer but disagree they hold much nutritional value.

on a side note, in the summer when they start coming in like gangbusters a great little recipe is refrigerator pickles. slice up some cukes (take of skin if desired) and marinate overnight in oil and vinegar, or italian dressing. makes me think about summer...

two vegetables that come to mind that DON'T have much nutritional value are iceberg lettuce AND cucumbers. tasty and useful but mostly water content. may be wrong on the cucumber thing but i don't think so.
 
In fact cucumbers are supposed to be negative calories : you need more calories to digest them than the calories they have

Which doesn't mean they have no nutritional value (vitamins, minerals, phytonutrients, etc)
