Cottage Cheese and Spinach Bake (great for nighttime!)

This low carb, high protein recipe makes the perfect side to any dish! I’m sure many of you cringe at the thought of cottage cheese but I PROMISE this dish does not taste like old sour milk! This is one of my favorite sides for dinner in particular, because of the benefits of having cottage cheese before bed. Cottage cheese contains casein protein which is a very slow digesting protein. When you sleep, your muscles are repairing and you want them to build rather than be used as energy. A fast digesting protein like whey (which is great post-workout) breaks down very quickly and would not last anywhere near as long as casein protein. All in all, cottage cheese is the perfect night time protein!

Note: I think iv’e finally found the best tasting cottage cheese ( the brand is Friendship and it’s 2% cottage cheese. It does NOT taste sour AND has less carbs and calories than the others I have looked at)

Ingredients:
1 Cup 2% Cottage cheese
4 oz package frozen spinach
1/2 Leek
2 Tsp Parmesan Cheese
1/4 Tsp Minced Garlic
Garlic Salt
Basil
Parsley Flakes

Directions:

1. Preheat oven to 350 degrees

2. Chop up leek

3. Cook spinach, garlic and leek in a skillet over medium heat

4. Spread the leek, spinach and garlic mixture on the bottom of a greased small baking dish

5. Mix the cottage cheese with parsley, basil and garlic salt

6. Spread the cottage cheese mixture on top of the spinach layer in the baking dish and top with parmesan cheese

7. Bake for 20 minutes

8. Turn oven to broil and broil for additional 10-15 minutes or until cheese is golden brown

9. Let cool, cut in half if your sharing (I ate the whole thing it was so good), transfer to plate and enjoy!
