As a point of reference, where are the top competitors at weight wise in the sport?

Well, the 3x North America's Strongest Man, Nick Osborne was under 250 pounds. This year, I believe that this is who all has turned Pro.

Nass Nationals 2002:
Nick Courtad, 290, 6'

Boston 2003:
Clint Darden, 290, 6'2"

Azalea Festival 2003:
Jon Anderson, 290, 6'

Beast of the East 2003:
Matt Cook, under 250

In the Pro's...the top guys are all 285-350 pounds. Mostly around 6' tall.

My numbers in the gym are so so for strongman. My best squat recently has been 800 and I have pulled a raw 702. A 750-800 pound deadlift is run of the mill for most pro strongmen...and several have squatted 900+.

I find the overhead figures very impressive for a lot of strongmen. Have you ever heard of a british competitor called Graham Mullins? I've heard he could outdo even Gary Taylor and Jamie Reeves overhead.
