Carrots

lots of beta caroten and some fiber

but quite high GI

not the best vegetable
green ones are way better
 
Green ones are better...There was a new study done on carrots that stated that they are better then originally thought. I'll get it when I get home...You're better off munching on brocolli
 
the glycemic load of ac arrot is low whilst the GI is high
whilst the GI is high, a carrot won't kill you, you'd have to eat like bugs bunny for it to do much harm
 
GI is not as important as GL

The GI of any food can be high but just because i eat that food doesnt mean I couldnt get a higher insulin repsonse from eating a lot of a low GI food. Its all in the quantitiy, carrots are 5g of sugar per 3 oz and 3g of fiber... Not only will that fiber slow the uptake of sugar but also you would need to eat a little over half a pound of carrots before you had even the same amount of total glucose as half a small potatoe. 15g of sugar from carrots and a small potatoe being about 35g of glucos. The GI is only a reference to per amount how fast the intake is. That means that the sugar in the carrots do uptake pretty fast but if the overall amount of glucose you recieve with them isnt much then tehre isnt much to worry about. The GL or glycemic load is the GI per serving. I think carrots are very low maybe 3 or so and a GL of 10 is high. There isnt any reason to not eat carrots.
