Carnitas...Its Whats For Dinner

Tried this recipe about a month ago and it was such a hit that I've been requested to make it time and time again since then. Got it simmering on the stove as we speak. If you like carnitas, this is a definite and all too easy to make.

Ingredients:
1 (3 1/2) pound boneless pork shoulder, trimmed and cut into 2 inch chunks
2 oranges, quartered
1 large white onion,http://allrecipes.com/recipe/simple-carnitas/# quartered
6 cloves garlic,http://allrecipes.com/recipe/simple-carnitas/# peeled and crushed
1/4 cup kosher salt
1 tablespoon ground cumin
1 tablespoon black peppercornshttp://allrecipes.com/recipe/simple-carnitas/#
2 bay leaves

Directions:
Place the pork shoulder, oranges, onion, garlic, kosher salt, cumin, black peppercorns, and bay leaves into a large pot. Add water to cover. Bring to a boil over high heat, then reduce the heat to medium-low, and simmer about 1 1/2 hours. Allow the pork to cool, covered, in the broth for 1 hour. Shred the meat with hands.

Once shredded, pan sear pork in heavy skillet with olive oil until nicely browned.

Serve on corn tortillas and garnish w/ cilantro, onion, and lime

It does. In fact, I double the recipe and refrigerate the leftover for the week ahead. All I do is then quickly sear the pork in a pan and I have carnitas tacos. This is a damn good recipe and very easy. The hardest part is taking the time to shred the pork.
