Can't handle low carb diet............any suggestions?

i have recently got back into my lifting routine after a 3 month lay-off for personal reasons. and now i am trying to lose the fat that i gained, and i tried a diet with very low carbs (atkins), but it was just too hard for me. i am a single father of a 14 month old baby.:baby2: so as you can imagine, i need all of the energy i can get, and also stay focused. the low carb diet put me in a pissed-off mood all the time, and that is not good for my daughter to see. so, what i am asking, is if anybody can name a decent cutting diet that i could try that lets me consume at least a moderate amount of carbs, and still get results. im not asking to lay out a plan for me or anything like that. just give a name of a diet, and i will do all the researching necessary to figure out how to do it. i am taking about 300 grams of protein/day (260 lbs), and a moderate amount of fat. and i drink about 3 gallons of water/day. i am doing cardio 3-4 days/week, consisting of 30 second wind-sprint intervals for 30 minutes. i have had some good results from the low carb diet....i went down 3 sizes in my pants in 2 weeks, and i only lost about 3 pounds, so apparently i was doing something right :D id appreciate anykind of help.
 
Carbohydrate/protein cycling diet. Look at "Mr. X's new page links" (a sticky thread). I like this diet, and it doesn't hinder my training in any way like keto diets do (personal experience).
