This is one of my favorite late morning/brunch meals. Its my version of a grilled ham and cheese using a low carb tortille bread instead of regular bread. Just layer the cheese (I like shredded cheese), then ham slices, and I also drizzle a little spicy ground mustard for a kick. Put the top layer on or fold one slice in half for an extra thick version~ Flip once, then cut with a pizza circle knife if you have one. I have an egg whipped and ready to scramble dead last. melt cheese and a little shredded ham on the eggs for extra flavor. We use about 1-2 packets of ketchup with the eggs.
