I mash anchovies, garlic, blanched almonds and some fresh Parmesan cheese to create a paste to create a Spanish style rice that's amazing in flavor.
This is of course consumed during a bulking phase. It's one of the many ways to make paella.
Wild rice, tomatoes, garlic, pine nuts, okra, anchovies, and chicken. Boil rice and dice and cook the chicken. Sautee the tomatoes, garlic, pine nuts, okra, and anchovies in olive oil and the oil from the anchovies. Mix with rice and serve.

I love to use anchovies, oil and all, in tomato sauces for pasta or pizza. Get anchovies packed in olive oil. I suppose if you are worried about sodium, that anchovies may be a no-no. Otherwise, they are great - even the oil can be good for you, IMO.
if you are concerned about sodium there are some european packed ones that are low sodium
or you could soak them in a bit of milk and that will take most of the salt out
i like them for the seasalt they contain
i just don't add salt to the recipes i make
same for SE asian fish sauce which is made from fermented anchovies
