What flavor is "red velvet" supposed to be, anyway?

I believe it's a chocoloate cake with red food coloring.

Back in the old days, it was a favorate of country folks and it was made with real lard and cream. Today's version is bad for you, but the Rose Hill VA version makes modern ones look like a protein shake.
 
A Red velvet cake is a rich, moist, sweet cake with a dark red, bright red or red-brown color which is most common in the Southern United States. It is usually prepared as a layer cake somewhere between chocolate and vanilla in flavor, topped with a creamy white icing.
