Salmon - pan seared both sides (skin side first) and baked until just done.
1 1/2 cups uncooked Jasmine rice cooked then soaked in one can of unsweetened coconut milk
3 bell peppers (yellow, orange, red) & 1 yellow tomato & 1/4 cup of sweet onion (all chopped) for a salsa, place in heated pan with 2 tbs of oil (your choice) until softened. Season salsa with lime, a dash of sugar & fish sauce. (optional - 1/4-1/2 of a small fresh green chilli finely chopped)
Make a bed of rice in the center of a plate - flatten slightly, put salsa either around the bed of rice or on the bed of rice and then lay a piece of salmon across the bed.
You could also flake the salmon and place that on the center of the bed with the salsa around the salmon or around the bed of rice.
This really good.
Better for bulking than for cutting though.
