I've long ago discovered that the numbers on the labels rarely add up and just take into account a 'margin of error'. ie. 4 carbs, 2 proteins and 1g of fat should never equal 37 calories right?! So I'm looking at mushrooms: 0 proteins, 0 carbs, and no fat ...but they have 2 calories. So besides the possibilities of trace macronutrients, what are they not telling me? Where do these calories come from?

Most of the calories come from rounding errors. For instance the mushrooms might have less than 1 gram of fat, protein and or carbs, but even if it had only 1/2 gram of each they can round it to zero but still have calories. The other source of error comes from method of measuring calories. Bomb calorimeters can also give you caloric values for stuff such as fiber, which may have no caloric value in your system, but feed it to a cow and it may be a different story.
