How often does everyone take more than 1 rest day in a row? I have been pondering taking a week off entirely...doubt that i'll do it, cause I think i'll go nuts without a workout! What do you think is best? Right now, saturdays are totally off, and sundays I just do cardio.

Bottom line is listen to your body. However, here is my little story for you to ponder. I have been going pretty intense since August (had two weeks off for holidays). Now over the last few weeks I had noticed both Strength and Endurance slowly dropping. Well last week I got some sort of cold and slept for 16 hours for 2 days and then did nothing pretty well for another 3 days. Monday was back to the gym and Legs to boot. All the strength was back, plus some, it has been a great week so far.
Now, was it the cold bringing me down over the last few weeks, I don't think so, I think I just needed a rest which I got. So I would say, if you have been going pretty hard for 3 months take 5-7 days rest and recover and enjoy some down time. You will find yourself stronger when you get back to it.
Remember Lift, Eat, Sleep? Your body does need time to rest and recover, and alot of time we don;t give it what it needs.

I suggest 3 one week breaks per year spaced out. Without them, you'll burn out. Time them around holidays, or even when you get sick, just take that week off. I train 5 days per week. No cardio per se, just walks. Gotta have 2 days a week out of the gym. Thinking about cutting my workouts to 4 per week and staying out 3 days. Workouts vary from 45 to 75 min. NEVER more. Remember, growth occurs outside of the gym. The gym is only the stimulus.

Every 2-3 months I have to go out of town for business. I take that time to recoup from lifting. I may go once in a week period, but thats it. Also, if Im feeling a little under the weather, then Ill take off to make sure I dont make myself sicker. I'll do it for no longer than a week off. It really helps my stamina and when I get back to the gym Im stronger than ever.
