You need to break up arms and legs. As you stated if that's where your lacking the reason for it is overtraining.

Work out a major muscle group then move to it's antagonist. So workout Chest and Triceps. By working the chest you are already warming up the antogonist muscles being the triceps. At this point they are ready to be slammed when you get to them. What's more is you won't have to do a million sets to fatigue them. Trust me.

Some of the plans that work best are as follows:
Chest and Triceps (abs)
Shoulders and cafs
Back and Biceps (abs)
Quads and Hams
Cardio, fore-arms and "full" abdominal workout.

THat's almost my same schedule. I put in a rest day after day 4 however... And give the arms another day to rest.
I also do supersets. Almost the same sets you do. It's working great for me. But I do suggest that rest day.
Other than that... that same thing is working for me.

Specifically... I hit Arms, then Legs, then Back, then Chest and shoulders. Then rest. Then start again.
If I still wanna hit the gym on my off day.. I go burn out calves and forearms.
