The overhead press mainly hits the Deltoids and tri's. As far as how to perform the lift that depends on it you want to do it seated or standing.

Behind the head, which is avoided by some, involves the delts and back muscles.

In front of the head involves the delts and chest.

Do standing overhead excellent way to build upper body girth. Also strengthens your lower back and tri's.

Seated militaries for a huge compound shoulder movement!!! Hell yeah!!!

Take it easy on the standing overhead presses untill your up to speed on the proper form or you may risk some back injury or drop the weight. Personally I avoid behind the neck movements as they make my shoulders "cringe". If you have to do them don't let your elbow joints break a 90 degree angle on the negative(go to low).

Any overhead press is great for shoulder development. I usually will alternate between seated barbell, seated dumbell, standing barbell, behind the neck barbell, and occasionally seated smith machine.
By rotating exercises, you will get much better overall development in your delts.
