Bent over dumbbell rows. Pull ups, although they recruit delts also. And wide grip pull downs, sometimes called lat pulldowns. Most back exercised also recruit biceps, so it's pretty tough to isolate lats.

Overall the best lat excersises are Wide grip wieghted pull ups and barbell rows. Dumbells tend to give room for cheating by twisting your body to lift the wieght. Barbells force you to do the excersise in a more strict manner. As for the pull ups, nothing will pack on more mass!! The reason you do not see a lot of people doing them is its fucking grueling. LOL

I do chins only for lats. I have a power rack and I place my barbell across the top of my rack and chin with it. I find that the size of the barbell is great for grip and building my lats. Work untill you fall off the chin bar.

The only lat isolater I can think of is pullovers. I don't really care for barbell or dumbell pullovers, but I really do like Nautilus pullovers.

I gotta agree with punch on that one with regards to putting on size. They are compound movements though. To isolate the lats alone you could try seated hammers or pull downs.

One exercise I like to do at the end of a back workout to just target the lats is one arm rows. I do this on a machine so I can use one arm to pull the cable and the other to hold on to the frame of the machine to keep my body from going back as I draw the weight towards me. I find this hits the middle of the lats well without having to incorporate much bicep into the movement.

Stiff-arm pull-downs with a lat pull bar and wide grip. Use high pulley.
