wondered what the best way to cook yams and sweet potatoes without producing the natural sugars in the vegetable. I'm worried about keeping my insulin levelsat a medium throughout the day, without a instant rise like you can get from sugar.

Sweet Potatos are kind of low on the Glycemic Table. Do worry about that!
Put a pack of Nutri-sweet makes it even better.... You will thank me about 4 weeks out from a show...

Yams do not contain a lot of sugar, they just taste sweet. Just cook it any way you please, and you won't go wrong.
