2lbs boned skinned chxn breasts.
one 16oz can high quality spaghetti sauce (marinara style)
one large onion
one red bell pepper
three celery stalks
4carrots
one head of garlic
dried basil, oregano, thyme, salt pepper.

2tablespoons extra virgin olive oil.

peel slice and dice the onion,carrots, celery and red pepper, peel the garlic (the more the merrier) and leave the garlic whole. Throw it all in a large lidded pan, add the olive oil and saute the veggies until soft.

If you are lazy skip sauteing the veggies and go straight to the next step.

Pour in the spaghetti sauce, and a teaspoon each of the dried herbs, add salt and pepper to taste. Then toss in the chicken and cover and simmer the whole thing for and hour and half. Check every once in a while and make sure its not getting too thick, if so add some water, or canned chicken stock. When its all done take out the chicken and store in seperate container. If the sauce is too thin cook it down until its thick and store in another container.

Eat with steamed rice.

Variations:
add some or any 'shrums, capers, decent olives, eggplants.

If you are really adventurous, when you take out the chicken add to the sauce 1cup dried white beans and add 2cups water, chicken stock, or white wine. Simmer with the beans for another couple of hours.

Shrooms eh! Now that would freak out my date for the night. Tripping balls about an hour after dinner.hehehe

good suggestion though, you can never have too many ways to make chicken.

Fat content, well considering the only fat in any of the ingredients is the olive oil and thats 18grs/table spoon, for the whole shit load youll have 36 grams, my guess is that you'll have 6 servings so that's pretty low fat.

Protein, well the only thing in it with protein is the chicken, and if ya got 2lbs or 32oz or 5oz/serving, that's about 45grms protein/serving.

Carbs, don't really have a clue, but there are no sugars, other than a few in tomatoes, all the other veggies are low in sugars and complex carbohydrates. So my guess is that this would be pretty low in carbs, excepting the addition of rice. So if you are shooting for low carb diet have it with steamed green beans.
