this is one of my favorites!!

i get some wheat pasta
some healthy choice spagetti sauce
boneless chicken breasts
fat free mozarella cheese

i cook the pasta and put the chicken in my george foreman grill...heat up the pasta sauce...mix it all together after dicing the chicken breasts then sprinkle your cheese on let it sit and you have a great chicken cathatorrie(spelling)

This is my favorite: CHICKEN IN A POT
1 roasting chicken
2 cloves garlic peeled
1/4cup sun dried tomatoes (chopped)
3/4lb. carrots peeled cut in half
1 large onion peeled and cut in quarters
4 medium baking potatoes scrubbed cut in half
4 celery ribs cut in half

Preheat oven 375 degrees. Arrange chicken in bottom of large casserole. Place garlic and sun dried tomatoes inside chicken cavity. Arrange veg. around chicken. cover pan and place in oven roast one hour. Remove veggies and keep warm. Baste chicken with juice and roast another 15 minutes or until chicken is brown.

Chicken San Marco

Cut chicken breasts into bite size pieces. Cook in a skillet with garlic and lemon juice.

Two 32oz cans of peeled tomatoes. Crush them into a pot and simmer with basil, until hot. Do Not Boil!

Prepare rice as normal.

To make the dish: Put the rice on the bottom, cover with the tomatoes and finally top off with the chicken.

It's sooooo easy and sooooo good!!!
