How many sets do you guys usually do for each muscle? 10 sets, 8, sets, 12 sets, etc.?

I usually only do five "working" sets per muscle.

1st exercise
warm up
warm up
moderate
hard core
balls to the wall

2nd exercise
warm up
balls to the wall
(sometimes I'll do another set here)

3rd exercise
balls to the wall

If I'm not totally blasted, then I'll throw in one more set.

Well the old addage that too much of a good thing well is......too much. Since your primary goal is to put the muscle under such distress as to stimulate growth I honestly believe that the less is more principal applies. I personally only do 4 working sets, but have read that many people have accomplished the same in just two. I also advocate reverse pyramiding as opposed to the usual pyramid lifting. I prefer to warm up Real Good, and then smack my heaviest set first, then strip set down 5-10% in poundage until my fourth set. My reasoning behind this is that psysiologically wouldnt it be more benificial to put your muscles under the most pressure when they are at their stongest. At this point both your glycogen and phosphagen stores are fresh and ready to go. Think of it this way, how well would you do in a 50yd. dash after running a 4mi. marathon? I usually only do 3-4 excercises per muscle group except the back, as it has more muscle to actually hit. Here an example.

1Warm up (VERY IMPORTANT)
2Heaviest set
35-10% reduction in lbs.
4 same as above
5 same as above
Always everything to failure and beyond if you can with forced reps and or negative reps. Good Luck, and Stay After It!

I usually do 3 excercises per body part. 4 sets, 1st set 15reps....2nd set 12 reps.....3rd set 10reps......4th set 8 reps...it works well and shocks your muscles to give you great gains, plus it makes your work outs alot less boring. GOOOOOOOD LUCK!!!!!!!

5-6(including warm ups) for the major excersise for each muscle group
bench press,squats,chins,trcept extensions...
then two other excersises w/ 3sets.
