Some things you probably didn't know about potatoes: 1. Excellent source of vitamins and minerals... Average size baking potato contains 3g of protein, 3g of fiber, 500mg of potassium (more than a bannana), 50% RDA of vitamin C, rich in iron, B6, and iodine. Also contain significant amounts of B1 (thiamin), B2 (riboflavin), B9 (folate), copper, magnesium, niacin, pantothenic acid, phosphorus, and zinc. 2. Never refrigerate a potato. It breaks down the starch into sugar. 3. Keep potatoes out of sunlight; it will make them taste bitter. 4. Remove all green spots, and avoid potatoes that are soft, wrinkled, or sprouting, especially for women! Old and sprouting potatoes release a substance called Solanine (mostly in the skin). Solanine can cause illness and can be toxic. Women should avoid it at all cost if they are pregnant or thinking about becoming pregnant. Solanine has been proven to cause spontaneous abortions in lab animals. | ||
