Everybody has a different opinon on working out. I am currently doing chest/tri monday, back/bi, tue, legs, shoulders wed, then repeating chest/tri thur and back/bi friday... Is this a good way to gain mass or am I better with another method?

Looks like you need more rest, but that's an individual thing you'll have to decide for yourself. Just train with enough intensity and you'll improve. Try drop sets, forced reps, rest pause, etc.

You'll figure it out. These things take experimentation. I used to always do each bodypart once per week but then my chest and biceps started lagging. So I switched to chest and bi's twice a week and so far for the last 3 months I've gained some improvements. Just be sure to give them enough time to rest. I do chest&bi's Mondays and Fridays. More than enough time.

If you can work out that much and still have things like knees, shoulders, elbows, back etc...then you are not working hard enough. Just my opinion.

I have to work legs a whole lot more than that to maintain a balanced physique and add overall size. (I split quads and hams, and hit calves on upperbody days). Maybe you have very good leg genetics and can get away with not working them much?
