Wild About Game?

You can use beef,lamb, fish,etc. for ALL these recipes as well!

Hubby and I are wild about game meats!

2/3 Cups Plum Sauce
1/4 Cup Concentrated Orange Juice
1/4 Cup grilled Sesame seeds ( you can use raw almonds too)
1/2 T. salt ( OR omit salt if you wish)
1 1/2 lbs. deer meat strips

1)Mix Marinade ingres. 2-gether and set aside half the mixture.
2)Soak the meat strips in marinade for 30 minutes.
3)Arrange on skewers.
4)Cook the skewers on a preheated grill.
5) Turn once, basting with the reamining marinade.
6) Serve w/ the sauce, either hot or cold.
 
Deer Chops w/ caramelized Red Onions

1 Cup finely cliced red onions
1 T. Olive Oil
2 T. butter
1/2 Cup white wine
1/2 Cup Unsweetened blackcurrent jam ( you can use blueberry jam too)
Salt and pepper to taste
4 deer chops

1) In a casserole dish, carmelize the onions in the oil and butter over med. heat.
2)Deglaze the casserole dish with the wine and reduce liguid by half.
3)Add jam and season to taste.
4)Continue cooking for 2 minutes
5)Cook the chops on the grill and garnish with glazed onions.
 
Baked Blue Cheese and Pine Nut Caribou Sirloin

1 or 2 minced garlic cloves
4 1/2 Oz. crumbles blue cheese
1/2 Cup reg. breadcrumbs
1/3 Cup chopped pine nuts0 or whatever nut you like
1 T. Olive Oil
Salt and pepper to taste
4 Caribou sirloin steaks
1 T. Olive Oil
1 T. butter

1) Preheat the oven to 450 degrees
2)Mix 2=gether all the ingred. for the crust.(add dried herbs to bread crumbs)
3)Sear the steaks in the oil and butter over high heat
4)Spread the crust mixture over the 4 steaks and cook in the oven for 5-10 minutes until the crust is golden.
5)Serve immediately, accompained with seasonal veggies!

ONCE AGIN..YOU CAN USE ANY TYPE PF MEAT IF YOU'RE NOT INTO GAME MEATS!

Simmered Elk and Roasted Garlic

2 Heads of garlic
1 T. Olive Oil
1 T. Butter
1 1/2 lb. Elk meat stewing cubes
1 coarsley chopped onion
1/4 Cup all purpose flour
4 Cups game stock( Elk) or whatever meat you're using
1 Cup carrot stalks
2 Celery stalks
8 baby potatoes-quartered
Pepper to taste

1)Peel heads of garlic, cut the clives in half and remove the germ. Roast the cloves in the oil and butter over low heat until they are golden and tender, set aside.
2)Brown the meat cubes in the same caserole.
3)Add the onion and continue cooking for 2 minutes.
4)Dust with flour and moisten with the stock,adding any dried herbs you perfer.) parsley,thyme sprigs, bay leaves.etc.)
5)Bring to a boil and simmer 1 hour.
6)Add veggies and continue cooking for 20 minutes.
7)Add the garlic cloves and mix well.
8)Season to taste and serve in deep dishes!

Elk Whiskey and Steal Flambe'

4 Elk Steaks
1 T. Olive Oil
2 T. butter
1/2 Cup Whiskey
1/4 Cup Whipping Cream
Pepper ans salt to taste
2 T. Fresh chopped parsley

1)Sear the elk steaks in the oil and butter over high heat to desired doneness.
2)Add the whiskey and flambe'. Let the flames extinguish themselves. ( Don't be a pussy-this process is easy to do) ;-)
3)Add the cream and season to taste.

I'm not one for bear meat...I've tried it before and thought it tasted tooooooo strong a taste for me.

Love all other types though!
