Why does bread bloat?

Hey been trying to find an answere to this question. Does anyone here know why bread is eliminated during the precontest diet? What is it about bread that causes water retension and slows the fat-loss? I mean the whole wheat does not have much sugar in it, but it still bloats.
 
For all intents & purposes, bread is processed carb. It isn't the most efficiently processed form of carb. Also note that wheat is estrogenic and further if you happened to be gluten-sensitive, it can cause allergic reactions (i.e. food allergy) that can cause bloat. When you eat carbs (complex carbs) they require water to 'hold' them -that's why for contest prep when you start a carb rotation or a carb deplete you look really flat - all the water is being dumped out of your system. Then when you do a carb up, you look really full. But that said, if you are looking for a carb source during competition prep, bread is a shitty source. Primarily because it is processed. You are better off w/ really basic clean stuff like oats, sweet potatos, regular potatos, brown rice.

I read before the wheat is estrogenic, i guess it really is true. Thanks man
 
American bread has high fructose corn sweetener and white or wheat flour. It may also have honey , sugar and other flavoring that make it taste like "American Bread"
High fructose corn syrup is a preservative that give the bread a longer shelf life. It's presence has nothing to do with the taste of the bread...

American bread is like 75 on the GI scale assuming the scale is based on glucose being 100
