they will be ok to eat. the quality will be a different story. remember everything you do to a food rom its natural living state to the time you eat it deteriorates its quality.

As soon as you start to cook vegetables, they begin to lose their vitamins, so you want to leave them raw as much as possible before eating them.
pre-cooked vegetables will also lose some taste and appeal due to colour change and deterioration in structure.
You could perhaps just blanch the broccoli (cook then plunge in icy cold water) and keep it that way, but it takes so little time to cook vegetables that it's probably better just to cook them just before eating.
