Trying to bulk with dietary restrictions.

Hi all, I'm new here. This is my first post.

First of my stats. Last time I officially checked I was 5'6", 120lbs, at around 9%. Definitely should have been bulking then, but I let myself panic and got afraid of putting on fat during the summer. Well I got over that and am now eating non-stop. I'm probably at 130-140 at around 15-16% right now. My goal is to be around 150-160 at 8% someday. Being enormous isn't my goal. My goals are more strength centered and are currently a 250lb bench press and 365 deadlift whenever that happens.

My restrictions are because of a weak stomach. Dairy, both lactose and casein make me feel sick and constipated. Gluten makes me sick and as if I'm dying of AIDs in a room with the heat really turned up. Peanuts restrict my airway a little and make me cough. Corn hurts my stomach and makes me bloated like gluten does. Soy makes my stomach burn so I'm currently weening off of that.

So my diet has been pretty simple. Mainly chicken thighs and pork (usually country style ribs) for meat because they are cheap. Sure, I'll occasionally get something nice (STEAK!!!) but that's not often. My supplements are the occasional B12 tab just to keep things in check, cod liver oil caps, and acidophilus. For the carbs I usually shoot for yams and brown rice because they are cheap and easy. Besides, most other things I can't do. I might venture into the world of squash one day but they are kind of low carb and require a lot of work for the nutrients they provide.

For fats, I usually try to keep it high but fail. My meats supply some, but other than that it's not like I can smear peanut butter on toast. Sometimes I'll run out and buy a dark chocolate bar (expensive gourmet kind) and dip it in almond butter. This is quite often, actually but I need to stop because it's expensive. Other times I'll pick up Filipino Cassava cake which I assume is fatty because it's made with coconut milk. Other than that, aside from buying them occasionally, I shy away from nuts because they are expensive and go too quick for the price. Today, though, I decided that I might start pouring coconut milk on my rice and eating it that way. I made a curry today and it tastes pretty good, but I definitely assume that Thai curry will get old quick. So when I get time I hope to make something that won't be so pungent, yet still good. Maybe some kind of sweet coconut rice, I don't know.

For veggies and fruit I usually do spinach and bananas with the occasional carrots or fresh coconuts. More sugary fruit burns my stomach, and spinach seems to be the best bang for the buck. Aside from all that, I sometimes eat flax but I NEVER enjoy flax time. A bowl of bitter tasting slimy shit gets sickening pretty quick.

On a typical day I eat about a pound and a quarter of meat, one of those chocolate bars with a quarter pound of almond butter, two bananas, three pounds of sweet potato/ 4-6 cups of rice or some combo of the two, and an lb of spinach. I don't measure anymore so it's more of a guess. But pretty accurate as far as I'm concerned.

It's been about a month or so in and I've gained pretty good weight. It's hard to tell how much is muscle, and how much is fat though. I probably could do better controlling the fat, but so far I've been accepting it as a side effect rather than getting too worked up over it. And I assume that it'll go away when I start adding more muscle. Besides, losing excess fat after a bulk hasn't been too hard for me. It's the details which are more complicated.

So does anyone have any advice?
