shrimp scampi

2 table spoons of smart balance butter (only 10g of fat ...no hydrogenated oil or sat fat)
3 garlic cloves
1/2 cup of white wine
2 tablespoons of lemon juice
garlic powder
salt & pepper
parmsean cheese (sprinkle on after meal) optional

saute garlic cloves in the butter for 2 minutes.....then throw your shrimp in along with the other ingredients...cover it an let it sit for about 15 minutes on low heat.

it works well over whole wheat pasta or brown rice....

oooohhh....i'll have to try that :)

jens is that a pretty good butter to use if your goign to use butter at all in you r cooking? i usually don't use it...maybe once every few weeks...but i always feel guilty eating it. what you think???

Yep, I use it also - I like the taste & that it has no transfats....so I don't see a problem with it at all!! As with anything, just watch your portion size.....
 
that makes me feel great!!! hahaha

it actually tastes the same as real butter...i can't tell the difference....
 
I make my shrimp a bit different. Pretty much the same besides the white wine; I use olive oil, I add crushed red peppers, sea salt, 2/3 cups of fresh squeezed lemon, 1 whole lemon for the lemon zest, and parsley lol though everyone probably has their own way of cooking. Just thought I would share.

i would have added some diced plum tamatos
