Classy Skank
This all can be done on the BBQ Grill or in an oven!
SAUCE:
1 T. Virgin Oil Oil
1 T. Minced Garlic
1 T. Minced Ginger
1/4 Cup smooth peanut butter
1 t. LOW SALT Soy Sauce
1/4 t. Ground black pepper
1/4 Tabasco Sauce- IF you are anything like me, I LIKE IT HOT SO ADD ALLLLL YOU DESIRE!
1 t. Fresh Lime juice
Shrimp:
20 LARGE shrimp- appox. 1lb. peeled, and deveined.
1 T. Olive Oil
1/4 t. Chili powder
1/4 Black ground pepper
1/8 Kosher salt( if you so desire) I omit the salt and it still tastes great without it!
To make the Sauce:
In a small pan- warm Olive oil over med. heat. Add garlic, ginger and cook until fragrant- approx. 1 minute- STIRRING occasionally. Add 1/2 cup of water, followed by peanut butter, LOW salt soy sauce, pepper and Tabasco. Whisk until smooth. When the sauce is comes to a simmer, remove the pan from heat. Just before serving, reheat the sauce over med. heat and add lime juice- plus 2-3 tablespoons of water, whisking vigorously to achieve smooth consistency.
To Grill Shrimp:
Lightly brush or spray the shrimp with olive oil. Season shrimp with chilli powder, pepper and kosher salt. Thread the shrimp on skewers. GRILL over high heat until opaque. 2 - 3 minutes- turning once half way through.
Serve warm with peanut sauce.
