Take your favorite white fish (cod is my fav)
Preheat oven to 400
Boil a pot of water
rinse fish, put on the middle of a long piece of foil and spoon on some salsa covering the top. Make a tent with the foil and roll down the top of the foil and crimp the sides. Check fish in oven after 12-15 minute - you'll learn the time buy the thickness of the fish.
Chop up some bell peppers - red, orange and yellow into small cubes, chop up sweet onion and tomato also in cubes. (Sometimes I like to take some left over asparagus and cut up into 2" lengths and add that at the last minute to get warm) Heat up a skillet with the oil of your choice 1-2 tbs and place the above inside and saute until soft and natural juicies are created. Season with salt, pepper and sugar. (you can also add some fresh grated ginger and chiopped cilantro)
Put rice noodles (mai/mei fun noodles) into boilding water for 5 or so minutes - you be the judge how hard or soft you like them. Rinse and put the noodles and the pepper mixture into the large pot - toss well with tongs.
Dress the plate - a bed of rice noodles try and get as much of the veggie mixture on there too and then lay a nice piece of the salsa covered fish over the rice noodles.
