Preheat oven to 425.
Rinse and dry 3-4lb roasting chicken.
Place in roasting pan/dutch oven.
Salt/Pepper inside and outside of chicken.
Cut 1 lemon and 1 head of garlic in half and stuff in chicken with fresh thyme.
Truss chicken with rope to ensure even cooking.
Cook uncovered approximately 1.5 hours until chicken reaches 165 degrees.
