Protein-packed omelette

Felt like I needed a little extra protein this morning, so I decided to make an omelette with tuna in it... tasted pretty good!
Here's what I did:
-pour the eggs in the pan like you would make a regular omelette (I used oil because it was a P+F meal for me, but the non-fat cooking spray works great)
-take your tuna and sprinkle it evenly on top of the eggs (one can might be too much, mine was tough to fold)
-fold one side of the omelette over the other to make a half-circle shape and move the whole thing to the middle of the pan
-let it sit on that side for a bit and then flip it to cook the other side
-top with cheddar cheese and taco sauce

Sounds good. I bet it's best with all white tuna and not the chunk light stuff. I like to put turkey in my omelettes too.
 
now thats a good idea, ive been looking for a good way to add more protein to my breakfast. how many eggs did you use?
 
I'm not on a really huge eating plan right now, so I only used 6 eggs (1 whole 5 whites) and one can of the solid white albacore---I don't buy that chunk light crap because it has a lot less protein than the albacore.

I've also been messin' around with the idea a little and have made some improvements on the old recipe.
Now I mix the tuna and the eggs together in a bowl before I put it in the pan--this makes it kinda like a casserole sorta thing which is pretty good.
I also made breakfast a P+F meal the other day and put a whole bunch of shredded cheese on top of it :) Tastes like a tuna melt!:p

Here's mine:

4-5 eggs (2 yolks only)
2 tbspn Quaker quick oats (not instant-just quick)
1/2 cup of DRY COTTAGE CHEESE (=21g protein)
chopped up ham or bacon, or whatever.

The key is that 1/2 cup DRY cottage cheese. It's a major boost to the omlette's protein and it tastes awsome (like a cheese omlette..duh!)

Tuna and eggs huh? I'll have to give that a try!
