Microwave Chicken Curry Recipe

saw this on tv yesterday. not sure what all "bad" is in it (what's in curry? coconut milk? soy sauce?) but it looks damn good and easy to make!

2 tablespoons Indian curry paste
3 tablespoons olive oil
4 boneless, skinless chicken breasts, cut into strips
1/2 bunch basil, leaves chopped
1/2 bunch cilantro, leaves chopped
2 (13.5-ounce) cans coconut milk
2 tablespoons soy sauce
Kosher salt
Freshly ground black pepper
Steamed rice, to serve
Paprika, for garnish
1 scallion, thinly sliced, for garnish

In a large microwave safe pot with a lid, mix together the curry paste and oil. Microwave on high for 3 minutes. Add the chicken to the pot and stir. Cover with the lid and microwave on medium for 8 minutes.

Add the basil, cilantro, coconut milk, and soy sauce and season with salt and pepper. Give it a good stir, cover it, and microwave on medium for 4 minutes. Stir it again, cover, and let it rest for 3 or 4 minutes. Serve over steamed rice, garnished with paprika and scallions.
 
Sounds like a great recipe, but for one thing.....I'm assuming the chicken breast used is already pre-cooked prior to throwing it in the microwave.
 
hey i posted this on another forum and some guy says (i'm para-phrasing a little) that cooking this in the microwave basically nukes all the good shit out of this meal!?!?!?!?! does anyone know anything about this? true? hype? :Chef:

I don't know about "nuking all the good shit"....whatever that may mean. Protien is still protien, but I'm highly skeptical of cooking meat in the microwave.

I've hashed this out before, all the studies done on microwave cooking destroying protein chains required power densities 1000 times that of the standard microwave magnetron output. Microwaves cook by exciting molecules of water (which are magnetic dipoles).
 
I saw this recipe on TV today as I recorded "Ham on the Street" on my DVR....

The chicken was chicken breast that was RAW when he 'waved it....

Post up how it tastes!!
 
WE MADE IT!!! i am eating it right now....and it is damn good!! very tender chicken...good flavor...not too bad for you! we made brown rice to go with it, and had to use curry powder as we could not find curry paste. you guys need to try this out!! was super easy to cook. :chomp:
