It is a well known fact amongst nutritionists that eating meat and starches at the same time will inhibit absorption due to:
the different enzymes needed for the meat and starch, cancelling each other out. Meat being an acidic enzyme and starch being an alkaline enzyme. Thus, the enzymes are like "aaah! Im not working with him, im outta here!" and the food is poorly broken down, thus poorly absorbed.
I tend to stick pretty close to this, as well as drinking 10 - 15 minutes before eating to not dilute digestive juices.
