Low Carb Chicken Quesadillas...

This is a great recipe for any time in the day, besides PWO :)

Ingredients:
* Low Carb Tortillas
* Chicken breast
* fat free cheese
* Low carb salsa
* Cayenne Pepper or tabasco

Directions:
Cook the chicken until it's where you like it. Cut it into thin strips and place it on one tortilla. Then top it off with salsa, condiments and top it off with the cheese (2 FF slices will suffice) and place the other tortilla on top. Nuke it for 30-45 sec and then cut it into 4-8 pieces, or whatever you want :D

Nutritional Facts:
1 Chicken Quesadilla yields roughly...

245 calories
5.4g fat
22g carbohydrates
16g fiber
46.1g protein

For this meal, I've been using the smaller ones. If I use the big tortillas, I'll be looking at 28g fiber PER quesadilla (14g per tortilla). That will set a little to hard on my stomach ;)

If done correctly, they are VERY filling :D
 
gotcha....so one would be a full meal? Say about 6oz of chx? I could prob. do a few of these a day.........
 
Mmmm...yum!! These sound excellent. I really want to order some of these tortillas, but the only thing that is available right now is a whole case. I don't want that many right off the bat!!!
 
PinkPanther, you'll be surprised how fast 100 of these go :)

jkurz1, it's up to you how much you want to include inside. The values above were based on a 4oz 'breast' ( :) ), so you can adjust accordingly, with a larger portion.

Also note, fiber was not counted in the totals...
 
Too funny! After posting this, I left work, stopped at the grocery store, and while I was waiting on something, stumbled upon these! I am so pumped!! They are super good. I tried this chicken quesadilla recipe for dinner last night, and I loved it!! One question...how come when you put these into fitday, it doesn't subtract the fiber out? I know you mentioned that Sawastea, but I am just curious as to why...

Fiber is a carbohydrate, hence it has to carry the 4cal per gream "label" on it...

What makes fiber indigestible to humans is the inability of our enzymes to breakdown certain carbohydrates, even though they may consist primarily of glucose (like most carbohydrates). The reason that our enzymes cannot breakdown fiber is due to its chemical structure, which is determined by the conformation of the bonds between glucose units.
