Currently: Currently I'm 25 years old, 6'4" tall and 288 lbs.

A nutritionist came to our office last week and talked to us about healthier lifestyles.. she had a 1-on-1 session with me and told me that I was at risk for Diabetes, High Blood Pressure, etc.. So last week I decided to make the effort to lose this extra weight. I just started working out and eating right about 7 days ago (so I'm JUST starting) but am pretty committed. I have a gym across the street from the house I just moved in to and have been going there and doing about 30-45 minutes on the elliptical and 15-20 minutes of weights. My diet has really changed dramatically in the past week as well, I eliminated a 1.5 liter/day Pepsi addiction completely and have stopped eating all "junk" food (at least what I considered junk food).

Currently my diet has been:

Breakfast: Banana with a coffee (minimal sugar and this is the only sugar I drink/eat throughout the day)
AM Snack: South Beach diet bar which is under 100 calories
Lunch: Salad, white chicken meat, or both in small portions if I'm really hungry
PM Snack: Honeydew and Strawberry's or Cantaloupe
Dinner: White chicken meat, corn, with a small salad and a glass of milk

I've also been drinking 4 or 5 x 16oz bottles of water throughout the day. My current gym time is set right before dinner and I try to eat 30-45 minutes after I leave the gym.

My question to you is... is the diet bad? Is drinking that cup of coffee really bad? It is very hard for me to concentrate/wake up and take care of all my morning meetings without my coffee, so I'm hoping this is OK .

I read that the milk is not so good, do you have any other ideas for beverages other than water that can be had with dinner? Drinking that much water per day is a big deal for me because I really do not like water at all and would like to have something with flavor while eating dinner. Tonight I'm going to buy Optimum Nutrition Whey Milk Chocolate protein to make some shakes to either count as my breakfast or snack? Or do you recommend drinking it after workout and right before dinner? My friend here is in to lifting and says that he substitutes a meal with that because of the calories.. I am going to go see a nutritionist but I've read up on a lot of foods and it's all so confusing for me.

Also, would having 2 slices of toast (white wheat bread or multigrain) with I can't believe it's not butter and some jam be a bad breakfast?

Sorry for the newbie questions but I really don't want to eat the wrong things.. any input would be much appreciated because this is all new to me and I'm ready to get healthy.

BTW: In the past week I have weighed myself a couple times and the scaled changes between 282 lbs, 284 lbs, etc.. is this normal? I thought it was really hard to lose 1 lb and here it is moving up and down everyday... Right now I'm at 282 lbs.
