It is fine...I did it all the time. Any good green veggie like that, even squash. Asparagus is also great.
Ouu How did I forget about this! Another green to add back in :) Thanks Lifter! Oh, & the 'gus is a natural diuretic. The amino it contains, Asparagine, can also cause a strong odor for the urine ... FYI :)

I always have fresh zucchini in the garden during the summer. Makes a great omelette too with onions and diced peppers.

Anyone else eat eggplant? LOL. Almost no calories and one of my favorite vegtables all year long. Eggplant strips, fresh basil and some diced tomatos. Add some fat free ricotta or mozzarella. :Chef:

Any non-nutrient dense flavor goodies go wicked well with 'summer' squashes. I love diced grilled zuchs with a big BIG handful of chopped italian parsley, chopped basil, chopped mint and chopped cilantro. Add a tbs of grated fresh ginger, a tsp of crushed red chilis and some white vinegar. YUM. O yes. YUM.
