How to "cook" steak. On a weber.

A lot of people think you need to cook the stuff real slow, not so. On a weber for a 1" tbone: Put enough charcoal on the bottom grill grate that will make a single heavy layer when spread out. Light, let ash over, spread out into layer. Dont leave a empty spot in the middle. Your top grate should be about 6" above. Place tbones right in the middle. Put on lid, with the vents about 1/3 open. This should be a really hot fire. Yes, I said put the lid on. Have you watch handy and count down 4 minutes. Open, flip over, put lid back own. Count down 2 minutes. Take steaks off grill, cover with foil or place them under a large glass bowl for 5 minutes. Perfect medium-rare everytime. Any juices that come out of the steak pour it back over the top of them.

You will have to get your own thing going and use this as a guideline but it's pretty accurate. I've done it hundreds of times.

Im surprised a lot of people don't know how to cook steak, and after several attempts I finally came up with this. No one has ever complained.

As far as seasonings, this is going to cook super fast so you can go ahead and put your salt and pepper on before cooking as it's not going to dry it out. Lowrys is also good.

Serving suggestions: corn on the cob is good, but a favorite is fried potatoes and onions-or better yet both. Peanut butter ice cream for desert kicks ass also.
 
We prep the grill the same way, so i know you speak the truth brother. But we monitor the steaks without using the time rule. We put them on, close the lid and periodically check for the top of the meat to push up the blood from the inside of the meat, basically when the "up" portion of the meat looks like it's sweating blood, we flip for about a minute of 2, and just like you we get a prefect medium to medium rare everytime.
