Good change from the traditional garden, ceasar, or waldorf salad if you're entertaining guests or just for dieting purposes. A friend of mine owns a restaurant and a similar salad was on the menu last year that was really good.
1 jar Hearts of Palm
1 1/2 cups chopped plum tomatoes
2 tablespoons minced fresh parsley
1 tablespoon chopped black or pitted kalamata olives
1 tablespoon white wine vinegar
1 teaspoon Dijon mustard
1/2 teaspoon olive oil
1/8 teaspoon salt
1/8 teaspoon black pepper
1 small garlic clove, minced
Boston/Bibb lettuce brushed with olive oil and grilled on both sides for 45 seconds. (Makes the lettuce taste almost like steak if that's what you cooked last)
Dice up hearts of palm, tomatos, parsley, olives, garlic and mix together with the remaining mixture. (Or substitute with any salad dressing that you like.) Place grilled lettuce leaves on the plate and spoon on the diced ingredients. Top with feta, blue or parm cheese for more taste.
