i made these this past weekend - AWESOME
-8 sea scallops
-1 cup chopped herbs - i used a mix of basil, thyme, mint, flat leaf parsley, chervil, and taragon
-dijon mustard
-cajun creole seasoning
-salt & pepper
-goat cheese - i used chevre
-1-2 tablespoons olive oil
preheat broiler.
season the scallops with salt, pepper, and creole seasoning to taste. spread each scallop with dijon mustard and rotate a couple times on the plate to lightly cover the whole scallop. roll the scallops in the herb mixture.
heat olive oil in skillet. fry scallops for one minute on each side. remove from pan and place on a baking sheet or roasting pan. top each scallop with 1/2 ounce of chevre and place in oven until the cheese lightly browns.
if you're watching your carb intake, these can be served over mixed greens with some type of vinagrette - try lemon juice, olive oil and scallions. but, i served mine on whole wheat angel hair pasta.
in a pan, i sauteed 2 gloves of garlic & one chopped scallion in olive oil. then, i added some lemon juice (about 1 tablespoon) and the cooked whole wheat pasta. i mixed in the remaining herb mixture - stirring everything together. then, i placed the scallops on top and voila!
