How many days a week are you lifting weights? I aim for 3 minimum around other physical activity. But I want to make sure I am gaining strength throughout the week. Is 3 times enough???

If you are seeing progress in your lifts then probably yes.
 
depends on the intensity of the workout man. i am not with you at the gym to watch what you are doing

generally though 3-4X per week is ample for a split routine
