I have read somewhere that is not good combinate fat and carbs, so can you tell me why? so in this case is not good caombination veggies with olive oil or bread with Pean. butte. what do you think??

It's mainly carbs wtih SATURATED fats to avoid. Fibrous veggies don't really count as carbs either. The only veggies you need to count as carbs are stuff like peas, pumpkin, potatoes, corn.
 
Its a silly myth, and the reasons why it is a myth would take too long to type. I typed a 2 page explination a year ago, but with this new search engine it is impossible to find.

Don't worry about it, combining fats and carbs together is fine, focus more on what type of fat and carbs you are eating.
 
As previously said you just don't want to eat high GI carbs and saturated fats at the same time

Its not like it really matters... the carbs will be digested, and cause the insulin spike hours before he saturated fat reaches the bloodstream. If one if worried about elevated an insulin spike while saturated fat is being digested...wouldn't it make more sense to say "don't eat high gi carbs 3-6 hours after eating saturated fat?". Even more to the point...since an insulin spike will cause all unburned calories (regardless of if they fat, or carbs) to be stored as adipose tissue very easily wouldn't it be better to just say do not eat high gi carbs unless one's glycogen stores are depeleted? Just a thought.

I agree. Why eat high GI carbs at all is you can avoid them. However if you ARE going to eat high GI carbs then adding saturated fats to the meal will definitely raise blood glucose levels for longer (ie insulin resistance) which is counter productive and defeats the purpose of eating high GI carbs to increase glucose flux into the muscle. The effects of high sat fat plus high GI carbs appears more from chronic intake rather than an acute single meal binge as long as you are young and fit, but even a single high sat fat/carb meal will increase insulin resistance as you get older. Best not to get into the habit in the first place...
