This is one of my favorite cheap/delicious/healthy foods of all time.
Take 2 Large Portobello Mushroom caps, flip them upside-down on a large plate if microwaving, or in a frying pan with olive oil or some other cooking oil.
Take a pasta sauce of your choosing (I use marinara sauce) and fill the mushroom cap up to the top with the sauce, making sure to get the inside of the cap saturated with the deliciousness.
Next, take your grated cheese (I use Sargento's Italian Blend, but its up to your taste) and sprinkle it over the tops as thick as you like.
Then cook to perfection.
I've made this a ton of times on a cutting phase, so easy its ridiculous. I actually just make them in the microwave, about 4 minutes, or until the top of the cheese starts to brown, just like a pizza.
This is probably my favorite low-carb meal to make.
