Anyone Know how to make the Ginger into the ginger they serve you with the Sushsi? thin slices,im trying to make my own,any suggestions?

Why not buy the gari? It seems much easier.
A carrot peeler will not be the right tool for slicing the ginger root because it tends to be "stringy". A better tool would be a Japanese (plastic slicer) mandolin. :)
 
gari => beni shoga => Gingerroot that's been pickled in sweet vinegar and colored bright red.
Beni shoga is used as a garnish for many Japanese dishes, especially sushi, and is also eaten to refresh the palate. It's available in thin slices, shredded or in knobs and can be found in Asian markets. :)
