Chronic issues with diet

I have been an IT worker for 20 years. Unfortunately due to the stress and pressure to work constantly this developed some very bad eating habits. I would only eat at night and lived off from coffee and cigarettes all day. I have recovered now and don't smoke and during the day. I also was following the diet trends and keeping my calories under 1600 for the last year. I have not been able to lose any weight even after 6 weeks of the p90x program which I did to tighten and tone. Now I find that I should be eating 2500-3500 calories depending on what chart you use. My wife is also struggling and my research shows we are probably suffering from starvation dieting. We both eat reduced calories and workout 30-60 minutes a day. I gained 5 lbs and she has been working out for 8 weeks with no weight loss.
My question what would be healthy calorie intake for the following ?
( We eat very healthy and are calorie conscious )

I am 5'11 280 lbs
chest 52, wrist 8, biceps 18, hips 51, waist 49, neck 16.5, calves 22, forearm 14.
I am currently coming off from 1600 calorie diet and am looking to confirm what is a healthy amount of food to eat. I would like to lose 50-60lbs and lose 12-15 inches off my waist and hip line as well as rip my abs chest and arms.

She is 6'1 160lbs
Waist 31 hips 34
She is coming off of a 1200 calorie diet and is afraid to eat more for fear of gaining weight.
She would like to lose 10-15 lbs and really wants to tone.

Any help would be much appreciated.
 
If you are eating healthy and clean you should not necessarily be worried about eating to much as its a lot of food. You losing 50-60lbs would put you at 220 lbs. I personally would have you eating around 2k-2.2k calories a day CLEAN as well as the gym. That's the start point I would say. To low of calories can store fat as well, have to find the level that works for your body. You burn calories while sleeping, throughout the day and 600-700(avg) at the gym in a 1 hour session.
 
Thanks gorilla-pharma . My calculations have been based on 12-13 calories per lb. Then using the BMR with activity calculator I get an average of 3300 to LOSE weight.
Which is 1500 more then I was consuming which would probably explain my bodies unwillingness to cooperate. I am built pretty thick and people say I look like I weigh between 200-220 which is what I would like to weigh.
My wife is working out 5-6 days a week and again was eating 1200 calories. For her weight activity I am thinking 2200 is a better bet to keep her body moving.

I am thinking it will take 2-3 months of healthy eating to kick my metabolism back to where it should be. Maybe more because of the chronic starvation I did for 20 years. My guess is my body predicts when and what I will consume and simply stores it all.
