I made these tonight and was something my wife didnt have to suffer through. Took boneless skinless breasts and trimed any visable fat. Cut into large cubes and then pulsed in the food processor. Make sure not to pulse too much or you will get mush. Added a bit of bread crumbs to bind them together and then garlic powder, onion powder and black pepper. Get the grill really hot and throw them on. They cook fast so watch them.
Nice because you can weigh out the portion and leftovers are great to snack on our use as a meal at work.
Put it on some whole wheat along with some raw broccoli sprinkled with red wine vinegar as a side.
