These sandwiches are AWESOME -
Rehydrate one or two chipotle peppers in some boiling water for about 10 minutes. Once plump, cool, deseed & devein. Mash the pepper up with chopped cilantro & parsley and olive oil until you have a paste (a mortar & pestle works best for this).
Smear chicken breasts or chicken tenders with the paste and cook in a little olive oil over medium heat.
While the chicken is cooking, finely chop some vidalia onions and mix with some whipped cream cheese.
Spead the cream cheese/onion mixture on some whole wheat pitas, slap on some romaine lettuce, and stuff in the chicken.
Voila! ENJOY.
