Benefits of eating low-GI carbs while cutting?

Can someone explain to me the concept of eating things like steel cut oats, sweet potatoes, yams, and other carbs while cutting and why it's done? What is the science and reasoning behind this? I'm new to learning the ins and outs of eating clean and cutting, and always looked at carbs as the devil.

Also, what is the deal with fat intake while cutting? Flax oil, ANPB, walnuts, etc - what is the benefit and how does this help in dieting for bf reduction?

Insulin control. Low GI foods do not spike your insulin levels and so you maintain a more constant and stable blood glucose level, which translates into more stable energy levels. In turn, you go longer without feeling hungry and typically end up eating less calories.

The glycemic index is a simple google search away - you will not get all the answers to your questions by asking about EVERYTHING. Start reading and then ask questions based on info you've read that you can't find further explanations to. Do searches on insulin, glycemic index, fat mobilization, fatty acids, etc.

The fatty acid question would have been a better one to start with since it is harder to find an answer to. Basically, healthy fats can help to mobilize fat within the blood stream and aren't stored as easily.
 
Fat is a fantastic source of energy and your heart loves fat.. there are more reasons but i dont feel like talking aobut them.

And like Nathan said, the lower on the "GI" the lower your blood sugar levels will be, meaning less insulin to shuttle that glucose to the cells to metabolize. Bottomline, your body needs glucose, thats our MAIN source of energy. Sure you can eat alot of fat and protein, but too much of anything is bad. There is such a thing as protein poisoning and eating too much fat your triglycerides will skyrocket. You can lose weight by not having a balanced diet (prot,carb,fat) but its not the healthiest.
